Foie Gras or Rillette?

  • Duck rillette is a rustic, shredded meat spread made from slow-cooked duck meat (usually legs) simmered in its own fat and spices until it falls apart. The texture is coarse, stringy, and rustic. The meat is shredded with forks and mixed with fat into a chunky spread. It’s flavour is savory, meaty, and salty. Rillette is best served at room temperature on crusty bread or toast, often paired with cornichons or mustard.
  • Foie gras is a rich, velvety delicacy made from the fattened liver of a duck. Smooth in texture, it is extremely buttery, and subtly sweet. It is best served chilled or slightly cool. It’s common to see it presented sliced on brioche or baguette with fig jam, onion confit, or sweet jelly.

It is question of taste, of course! I prefer the texture, savory and meatiness of the rillette with a dollop of amarillo chili confiture from The Single Variety Co. Delicious!
