The cheesemaker: Fromagerie Kaiser

Fritz Kaiser in Noyan, Quebec, founded the Fritz Kaiser cheese factory in 1981 near the border with the state of New York. Mr. Fritz Kaiser began crafting his cheeses in 1981 according to traditions from his homeland Switzerland.

This semi-soft, uncooked pressed cheese is interior-ripened for 2 to 3 months and made with pasteurized cow’s milk. Under its black edible film is a smooth and creamy white cheese with a slightly tangy taste of fresh milk.

It is perfect with an amber beer or a fruity, vibrant wine.
