The cheesemaker: Fromagerie Kaiser

Fritz Kaiser in Noyan, Quebec, founded the Fritz Kaiser cheese factory in 1981 near the border with the state of New York. Mr. Fritz Kaiser began crafting his cheeses in 1981 according to traditions from his homeland Switzerland.

The cheese: Mouton NoirUnknown

This semi-soft, uncooked pressed cheese is interior-ripened for 2 to 3 months and made with pasteurized cow’s milk. Under its black edible film is a smooth and creamy white cheese with a slightly tangy taste of fresh milk.

It is perfect with an amber beer or a fruity, vibrant wine.

Pick up a piece of Mouton Noir, April’s Cheese of the Month, and know that you are helping to contribute to a valuable community initiative; 10% of the proceeds from sales of this special cheese will be donated directly to Hub Hospice Palliative Care.
