The cheesemaker: Fritz Kaiser, Noyan, Quebec

Mr. Fritz Kaiser, master cheese maker and leading pioneer in the creation of Canadian ‘Raclette’ specializes in the production of firm and semi-firm, washed rind cheeses. Situated in Noyan, Mr. Fritz Kaiser began crafting his cheeses in 1981 according to traditions from his homeland Switzerland.

The cheese: Le Mouton noir

Le mouton noir is semi-soft cheese made from pasteurized cow’s milk.

Under its black edible film is a smooth and creamy white cheese with a slightly tangy taste of fresh milk.

Excellent melt qualities. A good replacement for cow’s milk mozzarella.

Food pairing

It is perfect with an amber beer or a fruity, vibrant wine such as Pinot Gris.
