The cheesemaker: Cows Creamery, Charlottetown, PEI

This month’s cheese was awarded the 2016 Best Smoked Cheese Award at the Canadian Cheese Awards,  and was the winner of the World’s Best Smoked Cheddar at the 2014 World Championship Cheese Contest.

Cows Inc. cheeses are made with milk from local Prince Edward Island farms. Given that no point on the island is ever more than 20 miles or so from the sea, the salt air and iron-rich red soil add to the flavour and quality of the products.

The cheese: Appletree Smoked Cheddarsmoked-cheddar-copy

Appletree Smoked Cheddar is an Extra Old Cheddar that is naturally smoked with applewood over an eight-hour period to produce a full smoky flavour.

With a semi-firm, smooth, pale caramel exterior, it has a smoky bite at the rind, and a sweet flavour with caramel and whiskey notes.

The deliciously mouth-watering taste of this 2-year old cheddar makes it perfect for cooking or eating on its own.

Food pairing

This cheese pairs well with a light, fruity red or white wine, a cider, or a blonde ale.
