Michel Pichet owns the farm F.X. Pichet and has been producing organic milk for over 25 years. His wife, Marie-Claude Harvey, has been the executive director of the refining house at Sainte-Anne-de-la-Pérade since March 2007.

Ste-Anne

Ste-Anne cheeseSte-Anne is an abbreviation of Sainte-Anne-de-la-Pérade, the town where the cheese maker is located.

This soft, organic cheese with a washed rind is made with thermalized milk and ripened for 60 days. Under its orange, slightly humid and sticky rind is a supple, smooth and uniform cheese punctuated by small openings and featuring milky, hay and herb aromas. Its texture is rich and its taste has hints of cream and salted butter that give way to a unique black olive flavour.
