The cheesemaker: Fritz Kaiser, Noyan, Québec

Fritz Kaiser founded the Fritz Kaiser cheese factory in 1981 in Noyan, Québec, near the border with the state of New York, and began crafting his cheeses according to traditions from his homeland, Switzerland.

The cheese: Le St-Paulin

St-Paulin is a semi-soft cheese with a smooth surface and orange rind coloured with vegetable food dye. The interior is cream to pale yellow in colour with a supple and elastic texture.St-Paulin cut

To be enjoyed for its milky and yoghurt aroma along with its buttery and slightly tart nutty flavours.

Food pairings:

This cheese pairs well with a Chardonnay, a light, fruity red wine such as a Pinot Noir or a light ale.
