The cheesemaker: Gunn’s Hill Artisan Cheese, Woodstock, Ontario

Shep Ysselstein is the owner and cheese maker of Gunn’s Hill Artisan Cheese in Woodstock, Ontario. Shep is one of the youngest cheese makers in Ontario and has already garnered top prizes for some of his cheeses (Five Brothers in 2014 and Handeck in April of this year).

Beau’s Abbey Style is a delicious marriage of Gunn’s Hill Oxford’s Harvest cheese with Beau’s All Natural Brewing of Vankleek Hill, Ontario. Beau’s Abbey Style is a hand-crafted, sumptuous semi-soft cheese that is modeled after a little known Swiss cheese called Mutchli.

As it ages it is washed every other day with a seasonal beer from Beau’s. It is a mild creamy cheese, with lightly lactic and buttery flavours.

Food pairings:

Excellent for serving on its own, but also has wonderful melting qualities. It pairs well with lighter white wines like Riesling and also Lager beers.
