Caviar-like in texture, the maple pearls, the latest product of cutting-edge creative cuisine, are exciting chefs and foodies everywhere. Used as a garnish, in cocktails and hors-d’œuvre or in desserts, when you bite into them the pearls burst in your mouth filling git with the quintessential essence of pure maple.
It seems the product has won over professional food judges as well. The Maple Pearls won the prestigious Grand Prize in the Trends & Innovations category at SIAL Canada 2012 in Montreal. The product bested 44 other innovative products competing for this prestigious prize.
Smoked Salmon Verrines with Maple Pearls
Ingredients:
300 g ricotta cheese
125 mL (1/2 cup) sour cream
15 mL (1 tbsp) fresh dill
140 g smoked salmon
50 g Canadian Maple Delights maple pearls
15 mL (1 tbsp) lemon zest
Preparation:
Preparation time: 15 minutes
In food processor, mix ricotta with sour cream, dill, chives and lemon zest. Add salt and pepper.
Empty half of ricotta preparation into four verrines.
Cover with half of the smoked salmon.
Empty remaining preparation and smoked salmon into verrines.
Sprinkle maple pearls on each portion.
